One of my sister-in-laws’ name is Lores, and she is a wonderful homemaker. Although these have morphed from muffins to bars to now cookies, there has never been a time I have been at their house when she doesn’t have a batch or 2 (or 3) made! Her recipe is always changing, so there’s a good chance it isn’t exactly like this today. My family has stuck with these because they are our favorite!
Lores’ Grain-Free Cookies
What you need:
2 1/2 cups almond flour
1/2 cup coconut flour
1 tsp baking soda
1/2 – 1 tsp salt
2/3 cup coconut oil (melted)
1/2 cup pure maple syrup
2 eggs
2 tsp vanilla extract
1/4 cup raw sunflower seeds
1/3 cup chia seeds
1/2 cup dark chocolate chips
Mix the dry ingredients (almond flour, coconut flour, baking soda and salt) in a bowl. Set aside.
In a separate bowl, combine wet ingredients (coconut oil, maple syrup, eggs and vanilla). Once that is mixed well, slowly add the wet ingredients into the dry ingredients.
Once that is stirred together well, add the sunflower seeds, chia seeds and chocolate chips.
With your hands, form balls with about 2-3 tablespoons of the dough. Grease a large baking sheet with coconut oil, and gently squish them just a bit before you put them on.
Once you are done
licking the bowl putting them on the baking sheet, place in refrigerator for at least 30 minutes (I’ve even done overnight).
Pre-heat oven to 350-375 and bake for 10-15 minutes. I’m sorry to be so vague on that, but I have found every oven to be different. We live in very high altitude, and today I baked these on 375 for 13 minutes.
But I want to just remind you… if you make these for a group that is used to Nestle Toll house cookies, they might look at you funny. But I promise they are delicious, and I feel great about my kids eating them anytime of the day!
