Clearly, I am on a Mexican kick.
Guacamole: another staple that I dearly love. Best of all, this stuff is GREAT for you.
What I used:
- 3 large ripe avocados, diced
- 1/4 cup diced tomatoes
- 1/4 cup finely chopped onion (any color)
- 1/4 cup chopped cilantro
- 1/2 glove of garlic, minced
- juice of 1/2 lime
- pinch of salt
Mix everything together. The more you mix, the creamier the avocados will get.
Enjoy with chips or veggies!
