On our first anniversary, John and I spent the day in Austin with our 3 month old baby boy. (Yes, we got pregnant on our honeymoon.) For lunch we ate at this tiny cafe on Guadeloupe Street. I can’t remember the name of the place, but this sandwich is forever etched in my brain. We’ve been recreating it ever since.
Ultimate Veggie Sandwich
Ezekial bread – toasted
avocado – sliced or mashed like guacamole
sprouts (I used alfalfa)
roasted red pepper
thinly sliced eggplant (roasted with olive oil and salt & pepper)
Cram all the ingredients between the bread and enjoy!!
