pantry basics – herbs de provence

Herbs de Provence.

This is a staple in our cupboard.  It’s a beautiful and fragrant blend of herbs … and while it is a traditional blend from France, it shows up in all sorts of our dishes, including in the croutons we use in Sopa de Ajo (garlic soup), which is Spanish.  And in our version of the Hot Crash Potatoes.
It’s so easy to make … and it’s a lot less expensive to make the blend ourselves (because these are all herbs in our cupboard already) than to buy it pre-made.
INGREDIENTS:
  • 3 parts dried marjoram
  • 3 parts dried thyme
  • 3 parts dried savory
  • 1 part dried basil
  • 1 part dried rosemary
  • 1/2 part dried sage
  • 1/2 part fennel seeds

Combine all ingredients in a small jar and shake it up.  Store in your spice cupboard and use as recipes require 🙂
