For some unexplainable reason, coleslaw is something my kids will almost always eat. I make a southern style slaw often, but thought I would change things up a bit tonight.
I made chicken taquitos and wanted something “living” to eat along side of it so I threw this together. It turned out to be a hit for the whole family!
Mexican Coleslaw
serves 6-8 people
What I used:
- 1 small head of cabbage
- 1 large carrot
- 1/2 small red onion
- 1/2 bunch cilantro
For the dressing
- 1/3 cup olive oil
- 1/3 cup fresh lime (1 lime)
- 1-2 tsp raw honey
- 1 tsp cumin powder
- 1 tsp chili powder
What to do:
- Finely chop or shred cabbage, carrot, red onion and cilantro.
- Mix together.
- In a jar, combine olive oil, lime, honey, cumin and chili powder. Place lid on and shake to combine ingredients.
- Add the dressing to the vegetables and mix well.
- You can serve immediately or let sit in refrigerator for a few hours.
