We aren’t allowed to buy mayonnaise in our house anymore.
You see … the Cowboy went to the store a few months ago and went to buy a jar of organic mayonnaise.
It was $12 for the quart!?!?!?!?
Which is apparently his tipping point.
So he came home in a huff, turned on his computer and looked at about a million different online sources for how-to make your own.
But we don’t use canola oil anymore. We have no vegetable oil in the house. And when we tried it with olive oil we were kind of overwhelmed by the olive-ness of it all.
So this is what he came up with. And we haven’t purchased mayonnaise since.
Grape Seed Oil Mayonnaise
- 1 egg
- 1 egg yolk
- 1 – 1 ½ cup grape seed oil
- Salt to taste
Beat egg and egg yolk thoroughly (It’s important to use GOOD eggs!) Slowly drizzle oil into the egg while blending with an immersion blender (or in your Vita-Mix/blender). When the oil is completely absorbed by the egg and thickens, you’ve got yourself some pretty amazing subtle and smooth mayo. Add salt to taste.
