Two weeks ago we introduced you to these two lovely ladies.

Rebekah Mocerino and Kaelin Keisel-Germann are not only real food foodies, but they are the co-chapter leaders of our local chapter of the Weston A. Price Foundation and are making a real difference in the food sources and information that’s available for all of us!  They are lobbying for change here in Montana (Rebekah was at the Capitol this week making a stand for raw milk availability in the Big Sky State … go Rebekah!) … and they really know the ins and outs, the whys and why-nots of traditional nourishing foods.

Last week, they told us all about raw milk safety.

Raw Milk Economics and Food Choice

Even if you are still not on the raw milk train; maybe you are thinking intentionally about your food a bit more.   Let’s recap a few points.  Raw milk has been safely consumed the world over since the dawn of civilization.  Its health properties include live and active enzymes, the anti-cancer CLA, a plethora of bio-available minerals and vitamins, Omega-3 fatty acids, health promoting beneficial bacteria, and immune boosting immunoglobulins. Raw milk is an inherently safe food as it boasts built-in organisms that help prevent it from spoiling.  Unfortunately, pasteurization inactivates nearly all of these components.  Synthetic vitamins are then added back in. It wasn’t until the horrid swill dairies popped up on the scene in the mid 1800’s did we start to see safety issues with raw milk.

Pasteurization, it was believed, was the only answer to prevent illness and death caused by this putrid, diseased milk.  Studies show that confinement dairy cattle have 300 times more pathogenic bacteria in their digestive tracts than cattle that are allowed to openly graze in pastures.  However, raw milk from healthy grass-fed cows is a wonderfully delicious, safe, and nourishing food. Raw milk’s safety record cannot be ignored.  Not one death from raw milk has ever been reported by the CDC since it began documenting data in 1973.  Yet an estimated 3000 people die a year in the US from other foods like poultry, produce, fish, and deli meats.

The Economics of Conventional vs. Raw Milk

If you believe in local food and would love to see a revival of rural America, then raw milk is the answer!  Pasteurization laws are largely responsible for the decline of American small towns and rural life.  In the conventional dairy system, farmers receive about $12 per hundredweight (about 100 pounds) of milk.  That is comparable to the price received in World War II.  However, when a local, raw milk farmer sells directly to the public, he gets $50-$250 per hundredweight. This can be done even with a small number of cows.  This explains why small and medium dairies are going out of business at such an alarming rate. In 2002, dairy farms went out of business at the rate of 16 per day!   If 10% of the population would buy raw milk and other products directly from the farm, we would need 75,000 farms, all making at least $200,000 per year.  Seems like a decent living!

Pasteurization regulations support large, commercial dairy operations and force out small farmers. Pasteurization laws transform what should be a local value-added product that keeps wealth in the local economy and into a commodity product that transfers wealth to large international corporations. (realmilk.com)  Conventional dairy farms, no matter what the herd size, are losing $1.10 per head per day.  Costs include feed (to get high milk yield), vet bills, and replacement cows -average life of confinement cow is only 42 months. It’s no surprise they are going under.

Our Food Our Choice?

Without getting all political on you; we want to bring a very important issue to the surface.  Even if you are still convinced that raw milk will send you to an early grave; we propose that you at least have the option to choose it if you wish.  In this great country we are afforded innumerable freedoms.  We can smoke cigarettes, devour a gallon of ice cream, drown our sorrows in a six pack, or eat French fries for lunch.  We would probably all agree that these are unhealthy choices. But we also can eat raw beef, raw eggs, raw oysters, and even raw frogs legs if we want! But the beauty is… that is our choice.

Unfortunately, the FDA thinks otherwise:

“There is no absolute right to consume or feed children any particular food.” …

”There is no ‘deeply rooted’ historical tradition of unfettered access to foods of all kinds.”…

Really? So, essentially, the FDA is telling us that we do not have the basic human right to feed our families what we want.  Does that mean you can’t have a garden or I can’t raise meat chickens?  Where is the line drawn and how long until we reach that point where it will mean that?  Well the milk line has been drawn and it appears eggs and cheese will follow.  Food freedom is essential.  If one of the most fundamental liberties of being human is chosen by corporations and agencies then what is next?

We must fight for our rights…..

Finally, we encourage you to make your own decisions and conclusions when it comes to feeding yourself and your family. Only you know what you are comfortable choosing.  We urge you to discover how and where your food was produced. Question what you eat.  Learn if substances were added or eliminated to increase profits. Write your senators.  Do your own research and don’t be lulled into the “because the experts know better” view.  Vote by purchasing from local producers and farms. Educate yourself and be your own health advocate, before someone does it for you.

Raw Milk Safety: A Bad Rap for No Good Reason

What is your opinion of raw milk?  If you live in the US you may think it’s a cesspool of disease, a public threat, or something only baby cows drink.  But if you live in Africa, Asia, Australia, New Zealand or Europe you may not give it a second thought.  It’s a fundamental part of your daily diet.  In Europe, regulations state that all raw milk products are “legal” and considered “safe for human consumption.” You can even purchase raw milk in vending machines in Europe.  Yep, vending machines.

Up until the Industrial Revolution and the introduction of Pasteurization, the only way milk was ever consumed was raw.  And people survived for several millennia … which is a pretty good track record.

So how did we get so terrified of this once sacred food that has nourished us for so long?  After all, God promised the Israelites to lead them to a land “flowing with milk and honey.” Is it safe to assume it was not the land of Smart Balance Lactose-Free & Omega-3 Fat Free Milk?  That would be a pretty cruel trick, no?

Distillery Dairies- Where it All Went Wrong

Before the 1800’s folks enjoyed milk straight from their cow/goat or from a local dairy farm.  But after the industrial revolution Americans had migrated into the city.   However the demand for fresh milk never waned and thus the distillery dairy was born.  These swill dairies, as they were also called, were set up next to whiskey distilleries.  The cows were fed the waste of the distillation process called distillery slop. These places were filthy, overwhelmingly putrid, and disease infested. Cow mortality was high and thousands of cows spent their sad lives in dark, narrow stalls, covered with flies, standing in their own excrement, and suffering from a range of infectious diseases like bovine tuberculosis and brucellosis. This unhealthy milk would not even make butter or cheese. The dairy owners often added sugar, chalk, and flour to give bulk and a “healthy” appearance to the watery, diseased milk.

Unfortunately many people, especially children, were drinking this milk getting quite sick.   Death and illness such as diarrhea, scarlet fever, typhoid, undulant fever, and tuberculosis were caused by swill milk. Infant mortality from swill milk accounted for nearly half of all deaths in New York City in 1839.

Enter Pasteurization…

Pasteurization was seen as the only option to what was known as the “milk problem”-how to make completely unsanitary milk safe for consumption. In 1893, a New Jersey doctor by the name of Henry Coit created the Medical Milk Commission to oversee or “certify” production of raw milk for cleanliness.   Coit and other physicians were able to recruit dairy farmers who were willing to meet the commissions’ strict standards in the production of clean, certified raw milk.  Unpasteurized milk was once again safe for the public.

But it didn’t last long.  Sadly, articles appeared in popular magazines like Ladies Home Journal and The Reader’s Digest falsely accusing raw milk for innumerable diseases. These articles were full of blatant lies and had no documentation. The campaign was successful, deceitful propaganda. This, combined with government officials and medical professionals being influenced by corporate dollars created a disastrous effect: the death of the American family dairy farm.

Biased Goggles Removed

If you eat today, you will put yourself at risk of a foodborne illness.  According to government data, you are much more likely to get ill from the salad bar, chicken, peanut butter, or pizza than you are from raw milk or any dairy product for that matter.  Dairy (raw or pasteurized) constitutes less than 1 % of all reported food borne illness.  But if milk worries you, you ought to be worried about pasteurized milk.  Total documented outbreaks due to pasteurized milk over the past few decades are 239,884 cases and 620 deaths!  Fact: According to the CDC (Centers for Disease Control) there have been NO reported death from raw milk since it started recording in 1973.*

milk 2  The question is…does raw milk pose a high risk?  You decide…

  • Each year roughly 1 in 6 Americans (or 48 million people) gets sick, 128,000 are hospitalized, and 3,000 die of foodborne disease.
  • From 1998-2010 there were 19 deaths from deli meats.
  • On average 15 people die a year from Gulf oysters.
  • .001 % of foodborne illness is attributed to raw milk annually; 29.4 % is caused by produce.
  • 33 deaths and one miscarriage attributed to listeria tainted cantaloupe in 2011.

Why the Prejudice Against Raw Milk?

Raw milk can become tainted and cause sickness just like any food. However the dangers of raw milk are greatly inflated.  Many examples of reporting bias, inaccuracies, and poor analysis have been found in statistical data. It is our position that the medical attitude toward raw milk today is still influenced by 40-year-old science and century-old practices from the distillery dairies.  Corporate greed and profit margins are also a huge driving force in today’s big agriculture. Small producers and willing consumers have to make a stand for the food they want.

Great News! Raw Milk is Inherently Safe

Milk from pastured cows eating their natural cow diet of green grass has built in antibiotic properties that help safeguard it from pathogenic microbes. Cows fed diets of grain produce sub-par milk that impedes its ability to protect itself. Healthy cows produce safe raw milk!

In contrast to 50 years ago, dairy farmers today have the great benefit of modern developments in equipment. Modern stainless steel tanks, refrigeration, herd testing, milking machines all contribute to dramatically safer, clean, and nutritious fresh milk.

Raw Milk- An American Staple Reconsidered

What is delicious, creamy, pure white, smooth, and one of the most nourishing foods on the planet?

We’ll give you and hint; it’s not Double Stuff Oreo filling.  It is good with cookies though…

If you guessed, full fat, pasture-fed, unprocessed milk, you are correct!

This may come as a surprise, since many people have given up on milk for health reasons. Or been swayed by the Powers-That-Be that skim milk is the path to svelte nirvana-ness. However, raw, fresh milk was once an American staple on every table and widely recognized as an essential food, especially for growing children.  But, alas, in our modern day, dairy milk is now often replaced with “healthier” alternatives such as soy, almond, or hemp milk.  But there are a few reasons we think you should not give up on real milk just yet…hear us out. First the bad news though.

Modern, processed milk is no longer a health food for two main reasons: Pasteurization and Industrial Dairy Operations.

Pasteurization is a method of heating milk to kill bacteria. Unfortunately this process is very destructive, leaving milk indigestible and lifeless. It kills the beneficial bacteria and digestive enzymes, disables a cortisone-like factor which prevents stiffness in the joints, denatures proteins, completely destroys vitamins B6 and B12, largely destroys vitamins A, D, C & E, promotes the rancidity of saturated fatty acids, and inhibits the absorption of minerals. Whew! In other words pasteurization leaves milk void of any nutrients. In fact, it can render it even anti-nutritive. Because the naturally occurring Vitamin D is obliterated, a synthetic, toxic Vitamin D is added. Huh?

(We also want to point out that homogenization, toxic additives like skim milk powder, thickeners, deodorizers, and artificial flavor enhancers are also on the naughty milk list, although we won’t focus on them here.)

Without going into the grim details, Industrial Dairy Operations leave a lot to be desired, including milk purity. Modern dairy cows are bred for extreme production, pushing and stressing the animals to the limit.

They are generally fed unnatural diets of grain, corn, soy, (all usually GMO), and are often given whatever can be scrounged up to meet their “nutrient” requirements.  This includes chicken poop, gummy worms, ground up sponges, chocolate, ice cream sprinkles, animal byproducts, and even leftover Mexican food.  Seriously.

The extremely high milk yield combined with low quality feed, demands technological saviors to keep industrial dairies afloat. These include insane amounts of growth hormones (rBGH) and large, steady doses of antibiotics, all of which transfer directly into the milk.

The laundry list of problems associated with industrial milk:

  • Allergies
  • Frequent ear infections
  • Gastro-intestinal problems
  • Iron-deficiency anemia
  • Skin rashes (eczema)
  • Increased tooth decay
  • Growth problems in children
  • Heart disease
  • Infertility
  • Cancer
  • Atherosclerosis
  • Colic in infants
  • Osteoporosis
  • Arthritis
  • Autism
  • Leukemia

Is it enough to say- stay away from grocery store milk?

Raw Milk: The Real Deal, With Benefits

Not all milk is created equal.  In fact some milk is highly superior. Raw milk from grass-fed cows, with full-fat content is a LIVING food. It is also one of the most profoundly nutrient dense foods available.

It is rich in minerals and enzymes essential for digestion. For example, the enzymes phosphatase and lactase allow for absorption of calcium, and digestion of lactose in milk.  This is why most folks who are lactose intolerant can enjoy raw milk with no side effects. Yay! The high butterfat content not only makes milk delicious, but contains the fat soluble vitamins A, D, and K2. These are the same vitamins nutrition pioneer Dr. Weston Price, (www.westonaprice.org) found in very high amounts in all the isolated, traditional cultures he studied that were experiencing perfect health.  The fat content in the milk helps absorb these vitamins.  Amazing how they work hand-in hand!  This is why we ALWAYS steer clear of reduced fat dairy.

Raw milk hosts many beneficial bacteria, as well as lactic acids, which allow the bacteria to colonize in the intestines. In fact, raw milk has been used in folk medicine (and the Mayo clinic) to treat diabetes, eczema, intestinal worms, allergies, arthritis, and asthma.  In fact, a large European study was done in 2007 showing kids who drink raw milk are 41% less likely to suffer from asthma and allergies.

Only from happy, grass-fed cows, flows nutritious milk. The benefits of happy cow milk don’t stop there.  It is very high in omega-3 and conjugated linoleic acid (CLA) which has strong anti-cancer properties. Grass-fed milk has 3-5 times more CLA than the pasteurized milk from factory cows. Immunoglobulins are present which provide resistance to many viruses and bacteria.  When milk is pasteurized there is a significant loss of these important disease fighters. Vitamin K2, a critical, but hard to come by vitamin, is present in the milk-fat of cows noshing on wonderful spring grass.

Another reason to drink raw milk?  It ferments instead of putrefies. Try leaving pasteurized milk on the counter for a week.  Dare to drink it? You first…Wait don’t.  But leave raw milk on the counter for a week and you have clabbered milk or cottage cheese brimming with beneficial bacteria and enzymes.

But, wait, raw milk is dange-er-ous, right?  

And if, by chance, I want to risk it; where do I get it?

We will be making some raw-milk yogurt in the coming weeks (which is a little different process as fresh raw milk doesn’t get heated to 185 degrees because that would kill the bacteria you’re trying to hold onto) and be sure to share the secrets for those of you interested in the experience!
